quinoa orange saladWe had a couple wonky bananas the other day, too far gone for even Wes to eat.  I dug out my recipe for banana bread and set to work.  The recipe calls for lemon zest, as a flavoring in the bread, but I didn’t have a lemon, so I substituted orange zest and proceeded with the recipe. As the bread was baking and I was cleaning up, I wondered what to do with the orange that now had no skin.  Eating it would be too easy, and I needed something for lunch, so winging it, I put some quinoa on to cook, and perused the refrigerator for something else to put in with the pieces of orange.  I cut up a pepper, tossed in some spinach leaves, opened and rinsed a can of chick peas and grated four carrots.  For dressing, a bit of olive oil, some apple cider vinegar and a teaspoon of sesame oil, along with salt and pepper completed the dish. Delicious!!.  So good, in fact, I’m making it again to take to a covered dish luncheon on Sunday—and all because I didn’t want to eat an orange
