Another Sign of Spring?

When we lived on Randall Court, Wes had a large, beautiful garden on the side of the house, which included an asparagus bed.  One of the first signs of spring was the emerging asparagus shoots.  In this house we don’t have a vegetable garden, let alone an asparagus bed, but we still love asparagus.  It’s imported from South America starting in January and it’s plentiful and fairly reasonable.  We love it roasted in the oven with thyme, lemon zest, olive oil, salt and pepper.  I’ll even eat it cold the next day if there’s any left.  What used to be a sign of spring is now a sign of mid-winter, but it’s a comfort to know it’s spring somewhere.
