With getting ready for the yard sale and having it this weekend, I haven’t done much cooking the past couple of weeks.  Saturday and Sunday night our dinner consisted of homemade granola and yogurt, because we were both too tired to cook and also too tired to shower and go out to eat.  On Monday, I made a grocery list and headed to Adams.  I tried a new recipe for dinner Monday night. The quinoa stuffed peppers were okay, but if I make them again, I will swap out the feta cheese.  The taste of it just didn’t appeal to me in the pepper and I like feta cheese.   I also made two vegetarian meatloaves: one for dinner tonight and one to freeze in individual slices for a quick microwave warm up.  And, because I cooked too much quinoa, there’s now a quinoa salad in the fridge for lunches this week.  Wes calls himself my “grunt” when I go on cooking sprees, as he does all the dishes that can’t fit in the dishwasher–and there was a lot to wash yesterday.  But, we’ll eat well for a few days.
