Yesterday, Wes and I watched Andrew and Natasha as their regular Monday babysitter (April) was away camping for the weekend. We invited Jonathan and Shannon to have dinner with us and planned on making grilled chicken, corn fritters, caprese salad and fresh green beans. That sounded yummy to everyone, so I cut the corn off nine ears and made the fritter batter, in addition, with Wes’ help, to getting everything else ready for dinner. As I was frying the fritters, I thought I would take a picture of them, as I served them, for a blog post. In the hubbub of getting dinner on the table, I totally forgot to take a picture until we were clearing the table after we finished eating. There was one, lonely fritter left on the tray that had been heaped with them. So, you don’t see my delicious looking presentation, you see what was left after we enjoyed them. I suppose that may be the better picture.
The second picture is a pile of fresh peppers I bought at Story Farm (where the corn and green beans came from too) and cut up for snacking. I keep a plastic bag of them in the fridge and, in theory, when I’m tempted to eat something unhealthy and calorie laden, I’ll reach for peppers. Let’s see how that works….
