I absolutely love it when I ask, “What would you like for dinner?” and I get an answer.  Wes had a taste for coconut shrimp.  It’s an easy fix: clean the shrimp, rinse and pat dry, dip in flour, egg and then coconut.  Bake, turning once for 12 minutes at 4oo degrees.  We used a Thai sweet chili sauce for dipping, and for the heat it adds, and served them with vegetables.  YUMMY!  I wonder what he’d like tomorrow night…..
