Last Friday when we made applesauce, I promised April a potato pancake dinner. Wednesday evening Wes fried the potato pancakes and April fried the regular pancakes (for non potato pancake lovers) while I made the potato pancake batter in batches in the blender. I use fresh parsley, and, because the ingredients are all whirled in the blender, the pancakes come out green, which doesn’t change the taste at all. It doesn’t matter to me what color they are, I ate an obscene amount of them. I only get them once a year.
