Every fall when the pumpkin spice lattes come back to Dunkin Donuts and Starbucks, I rejoice. I love the pumpkin and spice flavors and for a while have a decaf latte several times a week. Then, my pocketbook objects and reason prevails, so I try to find the same taste in foods I can make at home. I have found by adding cinnamon, allspice and cloves to one cup of milk and some strong coffee, I can make a decent “pumpkin” spice latte at home.
There was a recipe for groats that appeared on my Facebook feed–pumpkin groats. I had to investigate, so I bought groats in the health food store and cooked them, following the recipe, overnight in the Crock Pot. Delicious! And the recipe made enough for almost a week of breakfasts.
Yesterday, I made pumpkin cookies from a recipe I found on Allrecipes.com. I read in the comments how some people changed or added to the recipe, then, using some of those suggestions, I made the cookies. Yummy! They are supposed to be drizzled with a powdered sugar icing, but Raven and I decided that cream cheese frosting would be better. Being I had used half the butter called for and substituted applesauce for the other half, I will frost them today and not feel terribly decadent.
I’m still not over my pumpkin obsession, but I noticed that Starbucks has a gingerbread latte on their menu board.
