While perusing Facebook yesterday, I found this recipe from The Pioneer Woman, Ree Drummond.  Now, everyone knows how much I adore peanut butter, so it will come as no surprise that I had to make them immediately.  Wes was going out to play dart ball, so he ate a quick early dinner of leftovers, heated in the microwave, leaving the oven for me. I didn’t have any English muffins, but I did have Thomas’ Bagel Thins (3 points on Weight Watchers).  I quickly put two delights together and popped them in the oven for the required ten minutes.  While waiting, I finished up the leftover, oven-roasted broccoli (see–I’m still being faithful to WW). After the timer rang, the Delights had to go under the broiler briefly and then were ready to eat. Wes was still home, so of course, he had a taste and pronounced them delicious.  I agree and will definitely make them again–next time with a bit less peanut butter (I can’t believe I just typed that!)  Give the Delights a try.  They are—well—delightful.

The top picture is the finished product.  There was two, but I ate one before I remembered to take the picture. The bottom pic is before they went in the oven.
