I love it when I find a recipe and have all (well, almost all) the ingredients.  This recipe for zucchini fritters popped up in my Face Book feed so I gave them a try for dinner last night.  I shredded the zucchini, salted it, let it drain for a while and then pressed out a lot more water with paper towels before adding the rest of the ingredients.  While they look lovely in the frying pan, they were still soggy inside.  I mixed some yogurt with some pineapple/habanero sauce  to top them and that was the best part.  Recipe and leftovers got tossed.  Now I’m on a mission to find a good zucchini fritter recipe.
