It’s pumpkin spice season. I love the lattes from Dunkin Donuts, but with only one pump of the pumpkin spice swirl instead of the three they normally put in. I’ve seen pumpkin spice M & M’s. (Wes wouldn’t let me buy them.) There is also pumpkin spice Oreos, Keebler Fudge Stripe cookies, tea, hand cream and candles to name only a very few. Last night while cruising the internet, I found a review for pumpkin spice products, both good and bad–the last item made me shudder.
Last week, while waiting in a doctor’s office and reading old magazines, I found a recipe for pumpkin spice cupcakes. It started with a vanilla cake mix, added canned pumpkin and spices and finished off with cream cheese frosting. To me, the recipe looked like the batter would be a bit wet and the cupcakes would be soggy, but since I had time, I jotted down the recipe. Our church is having a yard/bake/mum sale this coming weekend and I had volunteered to bake. The baked goods have to be fall themed and what would be better than something pumpkin spice flavored? To be on the safe side, I baked them on Tuesday as a dry run. Oh yeah, I’m definitely making them for the bake sale.
