I found a recipe for lentil-brown rice soup made in the Crock Pot. Since is was so cold and nasty yesterday, I thought it would be a good day to try it. This was supposed to be soup. I kept adding broth and it kept sucking it up. My Crock Pot ended up being filled to the top with a dinner that was too thick to even be called stew. I scooped out a lot and sent it home with April, we had it for dinner, and there’s enough for another night and probably a lunch or two. I put some cranberry chutney on it and we ate it with whole grain bread. It doesn’t look too appetizing, but it was yummy.
The next time I make it, I’m inviting the whole neighborhood.
