When we shopped for vegetables at Adams this week, eggplant was on sale. My mouth immediately started watering for an eggplant sandwich. I have not had one since I “helped” Cathy and Dave eat up their garden eggplant last summer.

 Late Thursday morning, I cooked the eggplant and assembled my sandwich using the eggplant, lettuce, tomato, fresh mozzarella ,and mayonnaise on a hard roll.

Wes and his brother John had gone to the hardware store to buy a repair kit for our dining room light. I had been dusting and noticed the  light was loose. We had had a problem with it before and for some reason it happened again.

When the guys returned, I made them each a sandwich.  Wes is used to vegetarian food and likes most of it, but I wasn’t sure if John would care for it.  He ate it all, but whether he was being polite or was too hungry to turn down food, I’ll never know.

I’m hoping he liked it.
